Hi Friends, my name is Mama T.

I have always had a deep connection with showing love through food. Both of my grandmothers were excellent cooks and showed their love with food.

My Grandma Ann March Olson was from Newfoundland. She lived off the land with fresh fish, vegetables, eggs, fresh baked goods, and everything fresh living on a farm. When staying at her house, I had the pleasure of waking up to a giant queen’s breakfast of fresh baked goods, oatmeal, pancakes, fruit, and egg bakes. Dinners were the same way, baked potatoes, meats, veggies, and casseroles. Then for dessert cakes and pies. I literally was in heaven.

My Grandma Ann Belzay Kall was from Slovenia. She taught me pickling, curing meats, traditional foods from her and my grandfathers’ backgrounds. I would have the pleasure of staying at grandmas in the country. We would get up early to start the gardening before it got hot out. We composted, weeded, and picked fresh items out of the garden. Then we would go into the house and plan our meals by what we had on hand. I was taught traditional curing methods, pickling, and traditional foods. Some of my favorites are Matzos, Blintzes, Mazto Ball Soup, Brisket, Pastrami, Cakes, Cabbage Rolls, Potato Salad, Swedish Pancakes.

Both amazing women showed me the love of all thing’s food. From gardening, seeding, using what is available and fresh without waste, then taking these items and creating culinary masterpieces in the kitchen. I was taught cooking methods the old-fashioned way, measuring with your hands, smelling seasonings to create depths of flavors, and the satisfaction of hearing, mmmmmm when someone takes their first bite.

After 20 years raising 6 children, earning degrees in Marketing, Business, and Culinary Chef, I finally went for my dream of owning my own little family restaurant. I have traveled around the world learning about different cultures, their flavors, techniques, meeting their families and making new friends. Now, I take all that I have learned by creating new recipes for all of you.

I wanted to start something completely different here in the Twin Ports community.Each week, I rotate between Cajun/Creole, BBQ, and Comfort foods. By working directly with local farmers to create a new weekly menu with seasonal flavors that is only good for 5 days. All our meat, fish, and seafood are high quality and are fresh. After creating the weekly menu, my team creates weekly specialty drinks and picks new craft taps that pair with our weekly menu.
